Introduction

I've been trying to replicate the delicious wings made in a local restaurant. These are as close as I have come so far, and a little healthier since they are not fried. Sticky, salty and sweet! Ingredients

    3 lbs chicken wings
    1/2 cup fish sauce
    1/2 cup sugar
    16 cloves garlic (10 smashed, 6 minced)
    2 tbls canola oil
    1 tsp red pepper flakes (or to taste)
    1 bunch cilantro, minced
    1 bunch fresh mint, minced

Tips

*Since the marinade was in contact with the raw chicken, it's important to bring it to a boil for at least five minutes to kill any harmful bacteria which may be present. Then reduce heat and simmer until thickened.


Directions

Mix fish sauce, sugar and smashed garlic cloves in large stainless or glass bowl. Add wings and toss to coat. Marinate for three hours, stirring regularly.

Strain marinate into pot with red pepper flakes. Bring to boil and hold for five minutes. *Reduce heat and simmer until thick and syrupy.

Saute minced garlic in canola oil until golden (don't burn!). Set aside.

Barbecue wings until golden and cooked through. Pour reduced sauce over wings and sprinkle with herbs and toasted garlic. Serve warm with rice and lots of napkins!

Serving Size: Makes about thirty wings (recipe calculated as six servings, 5 wings each)
