Ingredients

2 tbsp soy sauce
1 can of pineapple slices or chunks
3 tbsp of pineapple juice (from can)
2 tsp olive oil
1 tbsp brown sugar
1 cup bean sprouts
1 tsp corn starch
1 lbs pork tenderloin
salt and pepper
5 cooked cups of brown rice
Directions
Mix together the soy sauce, pineapple juice, 1 tsp of olive oil, brown sugar, a pinch of salt and a pinch of pepper to make a marinade. Cut the pork tenderloin into cubes and let it soak in the marinade for about 10 minutes. Cut the pineapple slices into cubes (unless you bought the chunks :o) ).
Now take the meat out of the marinade and fry in portions in a pan using the second tsp of oil or cooking spray. Then mix the 1 tsp of corn starch into the marinade and add to the meat in the pan. Cook for 3 minutes then add the bean sprouts and the pineapple pieces. Spice to taste with salt and pepper and serve over brown rice.
