Found this recipe on pinterest, changed the pasta to whole wheat, added spinach and zucchini, and used lowfat cottage cheese and cream of chicken soup. Ingredients

    2 chicken breasts (pre-cooked or pre-cook)
    8 oz of whole wheat penne pasta (cooked to almost tender)
    1/2 cup each- spinach, onion, celery and green pepper
    1 cup of 1% cottage cheese
    3/4 cup of parmesan cheese
    1 cup of shredded cheddar or other kind of shredded cheese
    1 zucchini
    1 can of 98% fat free cream of chicken soup
    1 cup of fat free chicken broth

Tips

This would be lower calories and fat if you use fat free or 2% milk. I only had full fat cheese on hand.


Directions

Pre-cook chicken to nearly done
Pre-cook pasta to almost tender
chop veggies

Spray crock pot with cooking spray. After pasta is cooked add to crock pot. After chicken is done, chop and put into crock pot. Add all other ingredients and mix. Turn crock pot on low.
