Ingredients

    1/4 cup almond slivers
    Oil spray
    1/2 cup hot water
    1 box (8 servings) of lime jello, sugar free
    6 oz greek yogurt
    1 T lime juice
    6 oz of Kefir yogurt cheese
    4 oz of whipped topping thawed

Tips

Be sure the pie plate has cooled or the filling consistency will change due to the heat.


Directions

In a pie pan or small baking dish distribute the almonds evenly, spray lightly with oil, and bake at 350 degrees for 10 minutes. While the almonds are toasting heat to boiling 1/2 cup water. Pour the lime gelatin in a 4 cup measuring bowl and add the boiling water. Stir until dissolved (about 2 minutes.) Add to the jello the yogurt, Kifer cheese and mix well. Fold in the whipped topping. When the baking dish with the almonds has cooled, pour in the filling and smooth to the edges. Refrigerate for four hours. Serve with additional whipped topping if desired.

Serving Size: Makes 6 generous servings with less than 9 carbs.
