Number of Servings: 10

Ingredients

    1 lb.Pork Tenderloin, cubed
    1/4 lb. Applewood Smoked bacon, ciced
    Yellow onion, diced
    1 cup celery, diced
    1 cup carrot, diced
    .5 head of green cabbage, diced
    4 cloves of garlic, minced
    2 cups sweet potato, diced
    2 Cortland Apples, diced
    2 Tbl. Olive Oil
    1/4 Cup Sherry
    Salt and Pepper to taste
    1 Tbl. fresh Rosemary
    8 Cups Chicken Stock

Tips

For added flavor, caramelize the cabbage as well. It just takes about 1/2 hour to do so.


Directions

Heat 1 Tbls. of Olive oil and brown the pork and bacon.
Remove and set aside.
Deglaze the pan with the sherry. Remove and set aside.
Heat the remaining Oil and caramelize the onions, celery and garlic. Add the remaining ingredients along with all of the reserved ingredients and simmer for about an hour.
