Ingredients

    4 Small chicken breasts
    1/2 cup Italian bread crumbs
    1 tbsp grated parmesan cheese1/4 cup milk
    1 oz low fat cheddar or mozzerella cheese (optional)

    1 can of your favorite pasta sauce
    1/2 green pepper
    1 onion
    3 cloves garlic
    1 tsp each basil, thyme & oregano
    1 tsp hot sauce (optional)

    Your favorite pasta noodles

Directions

Mix bread crumbs and grated parmesan cheese on a plate. Pour the milk onto another plate. Dip each piece of chicken first into the milk, then into the bread crumb mixture. Make sure each piece is fully coated with the bread crumbs. Bake in a 375 degree oven for 20 min.

Meanwhile, sautee the onion, green pepper, garlic, and any other vegetables of your choice until tender-crisp. Pour in the pasta sauce and the additional spices. Simmer.

When chicken is cooked, remove from oven and spoon some of the pasta sauce onto each piece. Sprinkle with cheese, if desired, and place back in the oven on broil just until the cheese melts.

Serve the sauce and chicken over your favorite pasta and a salad on the side.
