Introduction

I used the pulp from my juicer for the apple, for calculations sake the closest I could get was dried apple. If you don't have a juicer, you could substitute shredded apple and decrease the applesauce so the batter isn't too wet. Ingredients

    Egg, fresh, 2 large
    EVOO, 2 tbsp (or your oil of choice)
    Applesauce, unsweetened, 0.5 cup
    Honey, 2.5 tbsp
    Brown Sugar, 0.125 cup, packed
    Vanilla Extract, 1.5 tsp
    Flour, white, 0.75 cup
    Whole Wheat Flour, 0.5 cup
    Baking Powder, 0.5 tsp
    Baking Soda, 0.75 tsp
    Cream Of Tartar, 0.5 tsp
    Cinnamon, ground, 1 tsp
    Apple pulp, 1.5 cup, lightly packed
    Walnuts, 0.5 cup, chopped

Tips

If you measure out the oil first, the honey will slide right out of the measuring spoon.


Directions

Preheat oven to 325*F, spray regular-sized muffin tin with nonstick spray.
Beat together eggs, oil, honey, brown sugar, applesauce and vanilla until foamy.
On low speed slowly add both flours, baking soda, baking powder, cream of tartar and cinnamon.
Mix in walnuts and apple pulp by hand.
Fill muffin tins 3/4 full.
Bake at 325*F for 20min or until toothpick inserted in the middle comes out clean.
