Ingredients

    Olive Oil Spray, 300g (2cups) cooked basmati rice, 1x415g can red salmon, drained, skin and bones removed, flaked, 1x375ml can light and creamy evaporated milk, 2 eggs lightly beaten, 2 Tblspns extra virgin olive oil, 2 Tblspns chopped fresh dill, 2 tspns curry powder, 80g(1 cup) grated tasty cheese, freshly ground sea salt, freshly ground black pepper, smoked paprika. Served with a tossed green salad.

Directions

Preheat oven to 170 degrees (Celcius), 350 degrees (Fahrenheit). Lightly spray a 2Lt. (8cup) capacity baking dish with the olive oil. Put the rice, salmon, milk, eggs, oil, dill, curry powder and half the cheese in a large bowl. Season with salt and pepper. Stir until well combined.
Pour the mixture into the prepared dish smoothing out the top. Sprinkle with remaining cheese. Bake in oven for 40mins. or until set. Season with sea salt and pepper and a sprinkling of smoked paprika for a dressing. Cut into 6 serving pieces. Serve with a tossed green salad.
