Introduction

Ingredients

    3/4 c raisins
    2 eggs
    3 T sugar
    1/4 c oil
    1 1/2 c unsweetened applesauce
    2 c flour
    1 t baking soda
    1 t. baking powder
    2 t cinnamon
    1 t nutmeg
    1/4 c milk
    1/4 c cocoa powder
    2 1/2 c grated zucchini
    1 t vanilla extract

Tips

Can omit sugar, raisins, remaining oil and use skim milk if calories are to be reduced.


Directions

Mix all ingredients except zucchini (no clumps), then fold in zucchini. Pour into two 9 inch greased pans (should be thin) and bake at 350F for about 30 minutes, or until tester comes out clean.
