Ingredients

Hoisin Sauce, 1 tbsp
365 Organic Peanut Butter (No Salt), 1 tbsp
Soy sauce (tamari), 1 tbsp
Crushed red pepper, 1/2 tsp
Vegetable Stock, 1/4 cup
Ginger, grated, 2 tsp (separated)
Nature's Promise Organice Extra Firm Tofu, 1 Package
Red Bell Pepper, 1/2" dice, 1 cup
Scallions, 2 medium sliced 1/4" thin
Broccolini, 2 cup
Mushrooms, Sliced 1.5 cups
Garlic, 10 clove (we use roasted garlic)
Couscous (dry), 1/2 cup
Extra Virgin Olive Oil, 1 tbsp
Directions
* Preheat oven to 350
* Drain & pat tofu dry with paper towels; slice into 8 even pieces and lay singly in an oven safe baking dish.
* Mix together: hoisin sauce, peanut butter, tamari soy sauce, crushed red pepper & chicken broth and pour over tofu.
* Place covered in the oven and cook for 1 hour covered. then uncover add in scallions & red pepper and roast for 30 more minutes.
* Boil 1 cup of water and add couscous. Cover and let sit.
* Stir fry mushrooms in oil for 2 minutes, then add ginger. Cook 1 more minute. Add in blanched broccolini, roasted garlic & a dash of soy sauce.
