Easy dish to prepare in advance and just pop into the oven for 30 minutes. Be sure to put pork chops on top of the rice before adding remaining ingredients. Ingredients

    6 lean pork chops
    1 1/2 tsp salt
    1/2 tsp pepper
    1 cup uncooked brown rice
    1 large onion
    1 can tomatoes
    1/2 green pepper, sliced
    2 1/2 cups hot water

Directions

Brown chops. Place rice on bottom of greased baking dish. Put chops on top of rice. Add onion, tomatoes and green pepper, then add hot water.
Bake at 350 for 2 hours.
