Number of Servings: 6


    1 lb. lean ground turkey
    1 cup (cooked) bulgar
    1 egg white
    3/4 cup 1% cottage cheese
    1/2 c chopped celery
    1 medium onion, chopped finely
    1/2 cup chopped peppers, (I use a combo of hot and mild/sweet ones)
    1 tsp basil
    1 tsp oregano
    sea salt & pepper to taste


you can also use left over brown rice or quinoa or couscous if you have those on hand. they all work. whole grain is the object of the game here though! keep it clean...


mix all the ingredients together while the oven is preheating to 350

dump into a loaf pan that has been greased and form into a loaf shape with a fork, pulling it together firmly around the edges

bake at 350 for about an hour, it will be incredibly moist! and the bulgar makes it hearty, but still healthy, using great whole grains.

Serving Size: makes 6 hearty servings (cut loaf in 6th's)
