Ingredients

    Muffins:
    2 cups whole wheat pastry flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1/2 cup applesauce
    3/4 cup brown sugar
    2 eggs
    1/2 cup water
    1 1/4 tsp. vanilla
    2 cups chopped apples (2-3 medium apples)
    Streusel Topping:
    1/4 cup brown sugar
    1 Tbsp. flour
    1/2 tsp. cinnamon
    1/4 cup oatmeal (rolled oats)

Tips

In place of streusel topping, you can top with chopped nuts.


Directions

Preheat oven to 375 degrees F. Grease or line muffin tins with muffin papers. Mix together first 4 dry ingredients (flour through salt). In separate bowl, mix together applesauce, 3/4 cup brown sugar, eggs, water and vanilla. Stir into dry ingredients just until moistened. Stir in chopped apples. Fill greased or paper-lined muffin tins 2/3 full with batter. In small bowl mix together 1/4 cup brown sugar, flour, cinnamon and oatmeal. Sprinkle evenly on top of muffin batter. Bake at 375 for 20 minutes or until toothpick comes out clean.
