Introduction
Great homemade chicken noodle soup that you can prepare the noodles early and cook later for dinner. Great homemade chicken noodle soup that you can prepare the noodles early and cook later for dinner.Number of Servings: 8
Ingredients

2 cups unbleached or whole wheat flour
4 egg yolks
1 tspn baking powder
2 cups chopped carrots
3/4 cup chopped scallions (about 5)
1 tbsn garlic powder
2 squares chicken bullion
water
4 frozen chicken breasts
1/4 tspn salt (for noodles)
salt and pepper to taste
Tips
Depending on your flour, you may need to add more water to the dough but DO NOT add too much water because it will take much longer for the noodles to dry out.
Directions
Combine flour, soda and salt in a medium sized bowl, mix together. Add the 4 egg yolks to the dry mix and combine the ingredients. Add 1/2 cup water to help the ingredients stick together creating a ball of dough. Cut the dough in 4 equal pieces and flatten with a rolling pin. Cut the flattened dough into 1/4" pieces, repeat with the other 3 smaller dough balls. Let these dry on cutting board or flour prepped counter for 3 hours.
After the 3 hours are up, put a pot of water on the stove and bring to a boil. Once the water is boiling, add your 4 chicken breasts to the water. Add your chopped scallions, carrots, garlic powder, salt and pepper to the pot. Allow the chicken to cook fully in the water and then remove the chicken from the pot.
While water is still boiling, add the dried noodles to the water. These will need to cook only about 20 minutes or so. While the noodles are cooking, using two forks, shred the chicken and place the shredded chicken back into the pot with the noodles. Finally, add your two squares of chicken stock to the pot and stir.
