I've been eating whole wheat pancakes for a while, but since going vegan, had to figure out how to modify the recipe. These are simple to make, low in fat, and pretty tasty. I like adding mix-ins like raspberries and walnuts for a little something special. Ingredients

    Whole Wheat Flour
    Light Soy Milk
    EnerG Egg Replacer
    Unsweetened Applesauce
    Honey
    Baking Powder

Directions

Mix all wet ingredients (applesauce, honey, egg replacer, and soy milk) thoroughly.

Add whole wheat flour and baking powder and mix gently just until all ingredients are wet. Leave the lumps, it's okay.

Cook on a griddle with cooking spray.

Serving Size: Makes 6 moderate sized pancakes.
