Ingredients

    Imitation Crab (5 cups, typically about two packages)
    3 stalks of celery
    10 red radishes
    3/4 cup chopped carrots
    5 tbsp cilantro
    1 medium tomato
    1 Haas avocado
    1 oz lemon juice
    Salt to taste

Tips

Feel free to add chopped onions, pepper, and even jalapeņos to spice it up more.


Directions

Chop the imitation crab, celery, radishes, carrots, cilantro, tomato, and avocado and mix into large bowl. Then add lemon juice and salt to desired taste. I used to do it all by hand, but it would take me over an hour. Using a food processor, cutting one ingredient at a time, shaved off half the time. Just be careful not to puree any of the ingredients, as this salad tastes great in part for all the textures and crunchy veggies.
