This recipe is usually made with veal but for those of us who are pinching pennies substituting pork is a fair trade. It is also really good with other types of vinegar, especially red wine or red wine and raspberry. This recipe is PACKED with nutrients and is one of my favorite fall recipes. Ingredients

    1 lb pork
    1/8 tsp salt
    1/8 tsp pepper
    3 small sweet potatoes
    2 McIntosh Apples
    1 cup Unsweetened Applesauce
    2 tsp Dijon Mustard
    1 1/2 tsp ground cumin
    2 sprays olive oil cooking spray
    1 tbsp red wine vinegar

Tips

You can substitute the pork for veal and the red wine vinegar for a variety of flavored vinegar. For a hint of fall try adding a little nutmeg and/or cinnamon to the mix. Enjoy!


Directions

This is pretty simple to make.

Preheat oven to 400 F

Place your pork in the center of a baking dish after salt and pepering to taste. Core then dice the apples and cube the sweet potato and place around the pork in the dish. Spray the dish with a coat of cooking spray.

Combine applesauce, vinegar, mustard and cumin and pour over the pork then bake for about 40 minutes. This should yield 3-4 oz of pork and about 1 cup of apple/sweet potato mixture per serving.
