Introduction

I've adapted several recipes into this one favorite. I've used agave nectar instead of honey, and a variety of other dried fruits in place of the Craisins. These are filling, go-to-in-a-hurry bars. Ingredients

    1 cup brown sugar
    1/2 cup honey
    1/2 cup melted butter
    2 tsp. vanilla extract (or other flavors you like)
    3 cups whole grain oatmeal or old fashioned oats
    1/2 cup flaked coconut, unsweetened
    1/2 cup dried fruit (Craisins or dried, diced dates are great)
    1/3 cup pumpkin seeds (raw)
    1/2 cup wheat germ
    1/4 cup amaranth seeds
    1 cup coarsely chopped almonds (I toast them first)

Tips

If the mixture is too dry for your taste, my dad adds a ripe banana to his. I've also tried adding a little applesauce.

You can make it easier to remove the bars by inserting a turner-type spatula down between the bars and the pan prior to baking and gently pressing towards the bars.

You can cut the bars after they've cooled about 5 minutes, but let them cool completely and set before you try taking them out.

Store in an airtight container.

For those on the go: I wrap these individually so that I can grab one as I dash out of the house in the morning.


Directions

Press mixture into a liberally greased 13x9-inch pan. Bake at 350-degrees for 25-30 minutes.
