    1/2 package of Trader Joe's Extra Firm Organic Tofu, drained
    1 tsp olive oil
    1 clove garlic, crushed
    2/3 cup Trader Joe's Marsala simmer sauce
    1 tsp curry powder
    2 cups carrots, cut into bite sized pieces
    1 1/2 cups cooked cauliflower


Great way to use up leftovers.


Drain tofu.
Saute tofu in a little oil and with garlic until browned.
Add in all other ingredients, mix well and simmer until heated through.
