Basic salmon cakes Basic salmon cakes
Number of Servings: 6

Ingredients

    Canned salmon (large can, 14.75 oz)
    1/2 cup onion
    1/2 cup mushrooms
    1 oz SunChips or other multi grain chip
    1 fresh egg
    1/4 cup or less chicken broth
    Dash of salt
    Dash of pepper
    Oil for frying

Directions

Flake salmon into bowl.
Chop/dice onions, add to salmon.
Chop/dice mushrooms, add to salmon.
Crush chips into fine crumbs, add to salmon.
Beat egg, add to salmon.
Add salt and ppper
Use a little chicken broth or water to moisten and combine all ingredients. Shape into 6 patties and pan fry in oil. Brown on both sides.

Serving Size: Makes 6 salmon cakes (1 cake = 1 serving)
