Introduction

We used to have a Specialty Deli Cafe here in our town that made the most delicious Chicken Curry Salad with chopped apple and nuts. I decided to take a shot at it myself but with leftover Pork Loin from last night! I decided to take a shot at it myself but with leftover Pork Loin from last night!
Number of Servings: 3

Ingredients

    4 oz. Cooked Pork Loin, chopped
    1/4 cup diced celery
    1/2 cup diced apple (half a medium apple)
    1 oz walnuts, toasted chopped coursely
    1/4 cup Kraft Light Mayo
    1 T. Apple Cider vinegar
    1 T. Curry Powder
    2 tsp. Splenda
    2 Mission Carb Balance small whole wheat tortilla
    1-2 lettuce leaves

Directions

Combine Mayo with Curry Powder, blending completely. Add Apple Cider Vinegar and blend well. Set aside. Mix together Pork Loin, Celery,Walnuts and Apple combining well. Pour dressing over these and mixing well. Divide 1/2 cup serving in half and place 1/4 cup on each tortilla with one lettuce leaf. Wrap and enjoy!

Serving Size: makes 3 1/2 cup servings
