Ingredients

    2 large firm Tomatoes
4 Laughing Cow Light Cream Cheese wedges
3 Tblsp diced Green Bell Pepper
    2 Tblsp diced Onion
    1/2 oz. Sharp Cheddar Cheese
4.25 oz Chicken of the Sea lump Crab Drained

Tips

Very versatile. Can substitute pepper and onion for other veggies. Fresh spinach can be used to line inside of tomato. Or switch meat. Be creative.

Directions

Core and Hollow Tomatoes (do not cut through bottom), reserving a 1/2 cup of the inside of tomato, drain. Mix with other ingredients until well blended. Split and stuff 1/2 of mixture back into tomatoes. Place on parchment paper in a shallow baking dish. Bake at 400 for approximately 15 min. Tomatoe skins will split. Remove from oven. Peel off as much of the skin of tomatoes as you can. Slice in 1/2.
