Ingredients

    1 chicken breast, no skin, no bone.
    1 can tomato sauce
    1 can diced tomatoes
    3 medium potatoes, diced and cooked
    1 cup of water
    1/2 onion, diced
    2 tbsp honey
    2 tbsp canola oil
    salt and pepper to taste

Tips

If you want to add some heat you can use a table spoon or two of chipotle pepper sauce ( you can buy canned chipotle peppers on the Latin food aisle on any grocery store) and add it when you add the honey. You can accompany the Tinga with tostadas ( hard corn shells). Enjoy!


Directions

Bake the chicken breast with a little bit of water until is done ( at 350 for about 20-25 min). Set a side and let cool off. Dice and cook the potatoes until they are tender but still firm. Once the chicken has cooled off, pull it using a fork. On a big skillet add the oil, the pulled chicken and the onions, stir fry for a couple of minutes, add the tomato sauce, diced tomatoes and cooked potatoes. Stir everything together. Add the water and bring to a boil, turn down the heat to low and let it simmer for about 5 minutes, add salt and pepper to taste, add the 2 tbsp of honey and taste ( careful, it will be hot!) let it cook for 2 more minutes and turn it off.
