Ingredients

    Potatoes, diced or hashed
    Mild Italian Turkey Sausage
    Feta Cheese
    Eggs
    Milk, 1% or nonfat
    Sliced sweet peppers
    Fresh ground pepper

Directions

Preheat oven to 350. Cook the potatoes and Italian sausage all the way done per instructions. While potatoes and sausage are cooking, dice sweet peppers. Spray muffin tin with cooking spray. Put appx 4 diced potatoes in bottom of each of the 12 muffin compartments. Quarter the Italian sausage links to 1/4" pieces. Divide evenly among the 12 compartments the sausage, sweet peppers, and feta cheese. In a medium bowl, beat the eggs, milk, and ground pepper until completely mixed. Divide evenly among the 12 compartments the egg mix. Put in oven for 22-25 minutes until edges brown. Let cool before removing.
