Introduction
You need a BIG BOWL for this salad. If you are following Fuhrman's Eat to Live program, you will understand. Despite the 11 grams of fiber, it looks spectacular and you will be envied if you bring it out at lunch at work. AND it is great pulsed in processor for a micro salad. Ingredients

3 cups colorful mixed greens, washed, and torn or chopped coarsely. 3 cups weighs about 3 ounces.
2 cups fresh spinach
1 apple grated
1 cup sliced strawberries
1/2 c. thinly slivered vidalia onion
1 T sesame seeds which you have lightly toasted
1 T Colavita Basalmic Vinegar (or a flavored basalmic from Dr. Fuhrman or Kalamazoo OIl Co.
If you are brave, you can add chopped sweet onion or shallots, but they are not figured into the nutritional information.
Tips
If you do your own sprouts, mung bean sprouts are good on top of this and add another crunch alongside the Sesame seeds. Cashews, walnuts,or almonds work well and are also anti-angiogenic but aren't included in the calorie counts.
If strawberries haven't arrived yet at your holiday time feast, substitute flash frozen raspberries. They are great to freeze in the little plastic containers when you find them on sale. Then just throw them on top of a salad as you start to prep your dinner. They will be defrosted and almost seem like fresh.
Directions
Dressing: Mix 2 T of the grated apple vinegar. Microwave for 1 minute. Cool while assembling the salad.
In a large glass bowl, place greens. Top with:
strawberries, arranged around the salad
remaining grated apple
onion
dressing, sprinkling over the entire salad.
Sprinkle with 1 T lightly toasted sesame seeds.
Serving Size: Makes one large, delicious, main-dish salad for one (or several side salads for a party)
