Ingredients

1C lentils, 1 carrot, 1 leek, 1 onion, 1 Tbs butter, 300g smoked pork (speck), 3 potatoes, 50ml white wine.

Tips

You may need to add some more water during cooking. Also feel free to add salt and pepper to taste, i think the speck makes the soup salty enough as it is.

Directions

Soak lentils overnight in 2C of water. Cut the carrots, leek and onion into pieces and saute in butter. Pour in lentils with water. Add the pork and diced potatos. Bring to the boil, cover and gently simmer for 1.5 - 2 hours. Add the white wine, and serve hot.
