Ingredients

Meatloaf:
Ground beef, 1 lb
Egg, 1
Bread Crumbs - Italian Style, 1/2 cup
Salt, 1 tsp
Pepper, 1/2 tsp
Onion, finely chopped, 1/2 cup
Ketchup, 1/4 cup
Soy Sauce, 1/8 cup
Potatoes:
Green onion, chopped, 2
Yukon Gold Potato, 2 medium
Red Potato, 2 medium
Butter/Margarine, 4 Tbsp
Soy Milk, 1/2 cup
Salt, 1 tsp
Pepper, 1/2 tsp
Cheddar Cheese, shredded, 1/4 cup (optional)
Tips
If you have a favorite recipe for meatloaf and/or mashed potatoes, it is easy to swap out the recipes and follow the same process.
Directions
Preheat oven to 350. Mix all meatloaf ingredients and knead until well blended. Place in greased loaf pan or free form on baking sheet. Bake for 45 minutes.
While meatloaf is baking, chop potatoes and boil for 20 minutes. Drain and add milk, butter, green onion, salt and pepper. Mash until smooth.
After meatloaf has cooked for 45 minutes, flip it on to baking sheet or larger casserole dish. "Frost" the meatloaf with the mashed potatoes, covering the top and all sides with an even layer of potatoes. Top with shredded cheddar. Bake for an additional 15 minutes. If it needs some extra browning, turn on the broiler for a few minutes.
