Ingredients

1.5 pounds thin cut sirloin tips
3 bell peppers (different colors)
1 onion
8 oz sliced mushrooms
4 chipotle chilis in adobe sauce
Chef megs no salt fajita rub-
1T chili powder
1T cumin
.5 T oregano
.5 T red pepper flakes
.75 T garlic powder or dried garlic
Tips
I didn't have a pan big enough, so I did it in 3 shifts since three steaks. Was busy in the kitchen bouncing back and forth but it turned out fine
Directions
Prep-
Slice onions and peppers into strips
Select number of chilis you want to use. I'd start with 4 as a base, alter according to heat preference.
Mince chilis and use some of the sauce to make a paste.
Spread over thin steaks
add seasoning
let this marinade a bit if you wish
Cook-
Grill steaks to medium-rare. I used a George Foreman and since they were so thin it only took 3 min each
slice steaks into strip
on stove top, saute onions for 3 min
add mushrooms and peppers for 2 min
add in meat to pan. Mix together and finish cooking, about 4 min
Serving-
This is enough food to act as a meal by itself. Or serve inside whole wheat tortillas or put into a salad. Add part skim shredded cheeses and Greek yogurt as a substitute for sour cream to complete this fiery meal
