Ingredients

    12 eggs (whisked ) can also use whites, but use more
    1 cup fresh spinach
    1/2 a medium red pepper, chopped
    half onion, chopped
    1 - 2 cups sliced mushrooms
    1 package fresh chicken breakfast sausage cooked and crumbled (can also use turkey, pork, ham or bacon...but adjust calories)
    1/2 NF milk
    cooking spray

Tips

I dry saute the mushrooms and onions before adding to the casserole in order to get rid of excess liquid. If you do not do this...you may have to bake longer.


Directions

Whisk everything together. Bake in a sprayed glass cake pan at 350. Cover for 30 minutes, take cover off for about 15. Let stand a few minutes before you eat.
