Introduction

Ingredients

    2 T vegetable oil
    2 cups coarsely diced carrots
    8 stalks celery, chopped
    2 onions, diced
    1 pound chicken breast, cooked
    16 cups hot water
    8 T Better than Boullion chicken base
    12 oz uncooked rotini pasta

Tips

This makes a very nice one pot meal. I like to serve it with bread and butter.


Directions

Heat oil in large stockpot or dutch oven. Add chopped vegetables and cook with lid on for about 10-15 minutes. Mix chicken base into hot water and blend with wire wisk. Add to the pot. Shred cooked chicken into bit sized pieces, and add. Bring to a boil, and simmer for about 30 minutes. Add pasta, and cook for an additional 20 minutes.

Serving Size: Makes about 24 servings at 1 cup per serving.
