    Dry ingredients:
    3 C. whole wheat pastry flour
    2 C white flour
    6 t. baking powder
    1/2 t. baking soda
    2 t. salt
    1 1/2 t cinnamon
    1 t. nutmeg
    1 t. ground cloves
    1 1/3 C sugar

    1/2 (one cube) Butter

    Wet ingredients:
    2 large overripe bananas
    2 1/2 C applesauce (unsweetened)
    1 1/2 C milk
    4 eggs (large)


1) mix dry ingredients together in large bowl
2) cut butter into dry ingredients
3) mix wet ingredients in separate bowl--blend well
4) combine wet & dry ingredients & stir until just wet.
4) fill greased muffin tins or papers (grease papers or muffins will stick)

Bake @ 400* for 15-20 minutes. Test with toothpick to see if done.

Serving Size: makes 42 cupcake-sized muffins
