Ingredients

3.5 cups flour
3 cups sugar
1 tsp baking soda
1 1/4 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 can (1.5 cups) pumpkin
4 eggs
1 cup oil
2/3 cup water
Nuts ** not included in nutritional data* if desired
Tips
I haven't tried reducing the egg and substituting apple sauce for the oil which would cut down on the calories.
This is something we make once a year, so even though it's not the healthiest thing, we still splurge
Directions
1. Sift together dry ingredients in a bowl
2. Add Egg, Water, Oil, Pumpkin and mix until blended. Mixture will be thick.
3. Pour into loaf pans sprayed with cooking spray
4. Bake in preheated oven at 350 degrees about an hour or until toothpick comes out clean in center of loaf.
5. cool on racks.Can flip out of pan and wrap in plastic wrap or cover in pans.
Serving Size: Makes 3 small loaves. About 8 slices per loaf
