Ingredients

    PASTA
    2 oz gluten-free spaghetti
    1/4 tsp olive oil
    1/2 tsp ground black pepper
    1/4 tsp sea salt
    1 tbsp Parmesan cheese
    1 tbsp feta cheese

    SAUTE
    5 black olives, halved and chopped
    1/4 can organic diced tomatoes
    1/4 medium yellow onion, chopped
    1/2 tsp ground black pepper
    1/4 tsp lemon juice
    1 tsp garlic powder
    1 tsp oregano
    1 tsp parsley

Tips

** PLEASE NOTE: This entire recipe is probably one serving for someone else, as it only uses one serving of pasta. **


Directions

Cook pasta according to package directions.
Combine the onion, tomatoes, and olives in a non-stick pan and saute on medium heat. Once the onions are becoming soft, add the lemon juice and seasonings. Cook until well-heated, stirring occasionally.
Add Parmesan, oil, salt, and pepper to drained pasta and mix well. Combine with saute mixture and top with feta.

Serving Size: makes 4 1-cup servings
