Introduction

Elk marinated in red wine and stewed with chanterelles and onions. Elk marinated in red wine and stewed with chanterelles and onions.

Ingredients

    400g Elk
    1 onion
    5 dl red wine
    2 bay leaves
    1 tbsp fresh thyme
    1 tsp cinnamon
    1 tbsp oil
    2 cloves garlic
    1 cup mushrooms (chopped)
    salt and white pepper to taste

Directions

Marinate elk pieces in red wine with thyme and bay leaf. Brown on high heat for 5 min. Add chopped onions and garlic and mushrooms. Sautee for a few minutes. Add marinade, tomato paste, cinnamon, salt and pepper, and make sure liquid covers meat (add water if necessary). Simmer on medium heat for one hour.

Serving Size: makes 3 hearty bowls
