Ingredients

    4 chicken breast, no skin or bones
    7 cups romaine lettuce
    1 cup shredded cabbage
    2 cans slice waterchestnuts
    1 cup snow peas, 1" pieces
    1 cup almond slivers
    3 tbl smoot peanut butter
    5 tbl lite soy sauce
    3 tbl sesame oil
    1/2 cup rice vinegar
    4 packet truvia

Tips

To reduce calories, cut the almonds


Directions

roast chicken breasts, chop into cubes

toss romaine lettuce, shredded cabbage, chestnuts, snow peas.

Blend peanut butter, soy sauce, 1/2 cup rice vinegar, sesame oil and truvia for dressing.

Top salad with chicken and almond slivers.
