Introduction

This is one of my "throw together" slow cooker recipes. It combines healthy, hearty vegetables with an unusual soup meat, pork.

Since I am a solo eater, I use and combine leftovers to create slow cooker soups to freeze for later eating.

Number of Servings: 20

Ingredients

    20 oz Leftover pork roast (picnic)
    1 c Mustard greens
    2 c Turnip greens
    2 c Hunts No salt stewed tomatoes
    1 c Sliced potatoes
    1 c Summer squash
    1 c Peas
    1 c Lima beans
    1.5 c Instant brown rice
    7 c Water
    2 Bay leaves (remove when finished cooking)



Tips

This is a fairly low sodium soup, so long as you watch the shaker at the table.

I use the leftover pork from making pork, carrots and celery. I do not use the drippings.


Directions

Shred and place leftover pork roast in slow cooker. Combine all other ingredients over the roast. Slowly add the water, stirring as you add.

Cook on low for about 5-6 hours. Allow to cool. If desired, add a dash of salt and pepper at the table.

Serving Size: Makes about 20, 1 cup servings
