Introduction

Pollo asado JUST means "seasoned chicken" in Spanish. If you do this with a three pound bag of boneless, skinless chicken breasts, you can freeze it in single portions, use it over a salad, throw it in a casserole, or do what we did-make chicken burritos on low carb multigrain tortillas. Ingredients

    Three pound bag of boneless, skinless chicken breasts-thawed, and cut into small pieces

    Extra Virgin Olive Oil, 3 tbsp

    Garlic powder, 3 tbsp
    *Onion powder, 2 tbsp
    Paprika, 1 tbsp
    *Cumin powder, 1 tsp
    *Corriander, 1 tsp
    *chilli powder, 2 tsp
    Cilantro, dried, 1 tbsp
    Parsley, dried, 1 tbsp
    Basil, 1 tbsp
    Salt, 1 tsp

Directions

Toss the pre-cut raw chicken with all the seasonings so it is evenly coated. Heat the e.v.o.o. in a large skillet. Place the chicken in the skillet. Add about 1/2 a cup of water to prevent burned seasonings. Cover and let cook over medium heat for about 20 minutes until completely cooked through. DO stir occasionally.
