Introduction
This low fat baked oatmeal made muffin size for an on-the-go breakfast. at approx. 120 calories each, you can have one as a snack or several as a complete breakfast. Ingredients

Banana, 3 medium over-ripe
3 eggs -large
1 TBSP Honey/agave or sweetner(optional)
1/4 tsp salt
Oatmeal 1 1/2 cups
Dried Cranberries - handful (about 1/3 c)
Walnut pieces - handful- (about 1/3 cup)
cinnamon to taste (1/2 tsp)
Baking Soda 1 tsp
1TBS raw sugar or granulated
Tips
I use a Blendtec blender.
If the blender doesn't work for you, you can use a bowl and mash the bananas, but I would chop the walnuts and cranberries before adding...
Directions
1. Place bananas, eggs, salt and sweetner in Blender. Mix until broken up and fairly smooth.
2. Add rest of ingredients, mix or pulse on and off until just combined. Scraping sides if needed. Do not over mix.
Pour into a muffin pan that has been sprayed with Pam.
Sprinkle sugar on the top.
Bake approx. 16-20 minutes
Serving Size: 12 muffins
4 muffins = 1 serving oatmeal, 1 banana, and 1 egg
