Ingredients

    - 3 medium sweet potatoes, peeled and cubed about 1/2 inch in size

    - 1/4 Cup balsamic vinegar

    - 1/4 Cup butter (I use Land O' Lakes)

    - 1 tsp. salt

    - 1 TBSP. brown sugar

Directions

- Preheat oven to 400 degrees.

- In a large stock pan, bring vinegar and brown sugar to a boil.

- Reduce heat to a simmer, and let the vinegar/sugar thicken.

- Add butter and salt, and increase heat to medium until the ingredients all melt and mix.

- Turn off the heat, and drop potato cubes into the pan. Mix to make sure all the cubes are covered in the sauce.

- Spray a baking dish with cooking spray, and pour potatoes in.

- Bake for 40 minutes, making sure to stir the potatoes about half way through to ensure a thorough baking.
