    2 cups gluten-free all-purpose baking flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    4 eggs
    2 tablespoon brewed coffee
    2 cups mashed ripe bananas (4-5 medium)
    1/3 cup + 1.5 tablespoon Truvia
    1/2 cup unsweetened applesauce
    1/3 cup coconut oil
    1 teaspoon vanilla extract
    1 cup chopped walnuts (1/2 reserved)


Original recipe calls for two pans, but I always do one. So if two pans (8-in. x 4-in), bake for 45-55 mins. Makes 24 servings, 12 slices per loaf.


In a large bowl, combine the flour, baking soda and salt. In a small bowl, whisk the eggs, coffee, bananas, sugar, applesauce, oil and vanilla. Stir into dry ingredients just until moistened. Stir in half the walnuts.

Transfer to one 9.25x5.25 loaf pan coated with cooking spray. Sprinkle with walnuts. Bake at 350° for 55 65 minutes or until a toothpick inserted near the center comes out clean. **Cool for 10 minutes before removing from pans to wire racks.** Yield: 1 loaf (12 slices each).
