Ingredients

    2 c blueberries
    1 c brown rice flour
    2/3 c potato starch
    1/4 c tapioca flour
    1 tbsp baking powder
    1/2 c sugar
    1/2 tsp cinnamon
    1/2 tsp salt
    1/2 tsp baking soda
    1/2 tsp xanthum gum
    1 c buttermilk
    1 lrg egg
    6 tbsp melted butter
    1/2 tsp vanilla extract

Directions

Mix dry ingredients. Add wet to dry. Stir until just combined. Cook in 400 degree oven for 18-22 mins
