Number of Servings: 32


    3 c whole wheat flour
    1 T baking powder
    1 t baking soda
    1/4 t salt
    2 t cinnamon
    1 t nutmeg (fresh is best)
    1 t cardamom (fresh ground best)

    1 c applesauce
    3 eggs
    1 T vanilla
    1 1/2 cups sugar
    2 cups canned pumpkin


1. Preheat oven to 350, grease 2 8x4 loaf pans.
2. Mix dry ingredients.
3. Mix wet ingredients in a large bowl. Add dry ingredients and stir until barely combined.
4. Place batter in greased pans and bake for 45-55 minutes, until done in center.
5. Let cool in pans 10 minutes before slicing.

Serving Size: makes 32 servings (2 16-slice loaves)
