    1 1/4 Pound Sweet Potato
    1 tsp Cinnamon, ground
    1/4 tsp Cardamom, ground
    1/8 tsp Nutmeg, freshly grated
    1/4 tsp Salt
    2 C Milk, Skim
    1 C Splenda


The sweet potatoes can also be wrapped in foil, baked, and the skin removed.


Arrange sweet potato in a steamer basket over boiling water. Cover and steam 20 minutes or until very tender.
While sweet potato cooks, process cinnamon and cardamom seeds in a coffee grinder or blender until finely ground; set aside, reserving 1/4 teaspoon for top of dish. Grate nutmeg on a microplaner.
When sweet potato is done, cool slightly, and process in a food processor until smooth. Whisk together spices (except for 1/4 teaspoon), sweet potato and next 5 ingredients in a large bowl. Pour into serving dish and garnish with remaining spices.
