I didn't want to fry fish, and one gets tired of herb baked. Soup. Soup is good! My picky kids that are not huge fans of fish asked for seconds, so super win. Or..."soup"er win, rather. Ingredients

2 cans evaporated milk
2 cans creamed corn
1 can reduced sodium yellow sweet corn
5 tablespoons chopped fresh cilantro
1 tablespoon dry dill weed
2 tablespoons dry basil
2 tablespoons garlic powder
1 tsp salt(optional)
Black pepper to taste
1 tablespoon olive oil
1 small onion, diced (about 1/4 cup worth)
Six 4oz Swai fillets, cut up into bite sized pieces
Directions
Saute onions in olive oil. Add the fish and the seasonings. Pour in the evaporated milk and corn. Stir often to prevent scalding. Soup is done when the fish is cooked and the "broth" is starting to be bubbly.
Serving Size: Makes eight 1.5 cup servings
