Introduction

Number of Servings: 4

Ingredients

    .5 cup red beans
    .5 cup black beans
    6oz baby carrots
    3 stalks of celery
    32oz chicken broth, reduced sodium
    8oz chopped turkey
    1 cup uncooked brown rice
    .25 cup chopped onion
    .75 cup of water
    Mrs. Dash
    Pepper

Tips

If using canned beans rinish well to remove all juice.


Directions

Cook beans night before, according to bag, if using dry beans so they are soft when added to soup.

Chop carrots, celery and onions.

Saute in a splash or two of the broth for 5 minutes then add chopped turkey and some more broth. Let cook for 15 minutes adding water to keep from sticking to pan.

Microwave rice.

Mix everything together and season with Mrs. Dash and pepper to taste.

Simmer for 30 minutes.
