This is a nice side dish -fresh! This is a nice side dish -fresh!

    6 Mini Shanghai Bok
    200 gr Fresh Pumpkin (not cooked)
    1 C Cherry Tomatoes
    3 Large Celery stalks
    4 Radishes

    1/4 C Fresh Dill
    100 gr Plain Fat Free Yogurt
    2 tbsp Cider Vinegar
    1 tsp cumin
    Salt-pepper to taste


No cooking necessary! Not even the pumpkin - just chopped it very thin.


Chopped the mini Shanghai (not too small). Add the remaining of the veggies (chopped to taste - I like the pumpkin - radishes - celery to be very thin... the cherry tomatoes in 1/2).

Add the dill to the yogurt. Add to the salad. Add the vinegar, cumin and salt-pepper.


Serving Size: 6 servings (about 1/2 Cup each)
