Introduction

Boxes of the Goya yellow rice, though delicious, has far too much sodium. This is only slightly better, but it has all the flavors. Ingredients

    2 packets Goya Sazon with Corriander and anatto
    1 tsp salt
    1/2 tsp ground black pepper
    1 tablespoon dry cilantro
    4 cups uncooked white rice to 8.5 cups cold tap water
    1 tablespoon olive oil

Tips

DO NOT lift the lid during the cooking process. This is to avoid crunchy rice. This is an excellent item to pair with my multipurpose pollo asado.


Directions

In a large pot(that has a well-fitting lid), place four cups dry rice, 8.5 cups cold tap water, the oil, and the seasonings. Give a quick stir, and place the lid on. Put the burner on high just until the water starts to boil. If you're anything like me, you do NOT want to leave the kitchen at this point. Once the water is to a boil (usually takes about 5 minutes), reduce heat to low, and set timer for 20 minutes. Turn off the burner after 20 minutes, and let rice set for an additional five minutes to ensure that it is fully cooked.

Serving Size: Makes about 8 one cup servings
