Introduction

Ingredients

    *2 tbsp Minced Garlic
    *1/4 cup Red Cooking Wine
    *2 cups Vegetable Broth
    *1 tbsp Reduced Sodium Tamari Soy Sauce
    *1 tbsp Red Miso Paste
    *1 tbsp Onion Powder
    *1 tbsp Italian Seasoning Mix
    *1 tsp Black Pepper
    *1/4 tsp Sea Salt

Directions

1) Heat the garlic with a little water in a medium saucepan over medium heat.
2) Add red wine. Let the wine reduce for a few minutes.
3) Add vegetable broth, soy sauce, onion powder, and Italian seasoning mix.
4) Add red miso paste. Stir thoroughly until the miso dissolves.
5) Add salt and pepper.
6) Test the broth and add more seasonings to taste.
7) Enjoy!

Serving Size: Makes about 1-2 cups of broth.

    I love this recipe, but change it up a bit. Instead of the onion powder, I sauté some shallots or onions in a little bit of water till they are soft. Then add the rest of the ingredients. I am not a vegetarian yet, but working on it. This tastes delicious and quite a bit like "real" beef broth. - 4/10/13

    Thanks, Heather! I think when I first made the recipe, I didn't have any actual onions in my kitchen. Your idea definitely would add more texture and natural flavor to the broth. :)
