Introduction

Ingredients

    2 extra large chicken breast, boneless, skinless (about 2.5 lbs total)
    1 jar (16 oz) green salsa
    1 package of taco mix (add more heat as desired with crushed red pepper)
    1/4 cup cilantro, washed and chopped, stems removed
    juice from 2 limes (approx 2 Tbsp)

Tips

Use low sodium taco mix if possible because the salsa already has a lot of sodium.


Directions

Mix all ingredients except chicken in slow cooker, then add chicken.
Cook for 4 hours on high or 8 hours on low.
Toward the end of cooking time, shred chicken with 2 forks, to desired chunkiness. I like mine very shredded as it incorporates the flavor of the sauce nicely that way.
Use for taco meat, burrito or enchilada filling, or topping nachos.
