Ingredients

2 c. Lundberg Wild Blend Rice, Cooked.
1 c. Chopped Fresh Onion
1 T. fresh chopped garlic
1/2 c. Chopped Sweet Pepper
2 T. Olive Oil
1 T Browned Sliced Almonds
1 T chopped raisins
Salt and Pepper to taste
Dash of ground cinnamon (Optional)
Tips
This recipe could be enhanced with cumin or other favorite seasonings and spices, garnished with chives or green onions. Chilies could be used in place of the sweet peppers. This recipe is only limited by your imagination!
Directions
1. Cook rice. While rice is cooking,
2. Chop onions and peppers. Set aside.
3. Brown sliced almonds in a skillet. Set aside.
4. Add 2 T. Olive Oil to pan. Heat.
5. Add chopped onions, peppers and garlic to oil and saute until soft.
6. When rice is done, add 2 c. Cooked Rice. Freeze any remaining rice in a freezer bag for later use.
For immediate serving:
Add chopped Raisins and Almonds,season with Salt and Pepper to taste and serve!
For serving later;
Just before eating, add chopped Raisins and Almonds, season with Salt and Pepper to taste, heat ingredients and enjoy!
